Each RISICO grape bears the weight of selection. The production process is a ritual of precision and respect. The grapes pass through a careful vibrating conveyor belt, where only perfection is allowed. The grapes, almost intact, ferment in stainless steel at a controlled temperature (maximum 25°C), preserving their aromatic integrity for 14-21 days. After spontaneous malolactic fermentation, the wine ages for 14 months in a delicate balance of wood (50% new, 50% used) before reaching its final expression in the bottle.
In the glass, RISICO displays an intense ruby red color with purple hues that betray its youth and strength. On the nose, it's a varietal explosion: pungent notes of black pepper intertwine with the wild sweetness of berries, blueberries, and blackberries. On the palate, it's silky, rich with red and black fruits, as well as hints of Mediterranean scrub. Fresh and persistent, the finish is an embrace of precise and discreet tannins, leaving a velvety and persistent texture.
RISICO is a rare pearl, intended for those who know how to wait and recognize authenticity.
Production is extremely limited: only 3,000 bottles have been made.
The first vintage of production is 2024 and the price in wine shops is around 40 euros.
